GRAPE VARIETY: Negroamaro IGP Salento Biologico, a native vine of the provinces of Taranto, Brindisi and Lecce that came centuries ago from Greece.
PRODUCTION AREA: Masseria Mita, Municipality of Crispiano, Province of Taranto
TRAINING SYSTEM: espalier
SOIL: clayey
PLANTING DENSITY: 4500 plants per hectare
HARVEST PERIOD: first week of September
VINIFICATION: Wine obtained from organically grown grapes in application of EEC Reg. 2092/91 Controlled by ICEA. Mechanized harvest carried out in the early hours of dawn. Short crushing with cold maceration. Fermentation at a controlled temperature of 15° – 16°.
AGEING: in steel tanks
COLOUR: purplish pink
AROMA: intense of fresh fruit, tending to pomegranate TASTE: fresh and balanced
ALCOHOL CONTENT: 12,5% vol. – Serve at: 8°C
FOOD PAIRING: Shellfish, fish, Mediterranean dishes and highly recommended as an aperitif.
