GRAPE VARIETY: Primitivo Igp Salento Biologico, native vine of the provinces of Bari and Taranto. PRODUCTION AREA: Masseria Mita, Municipality of Crispiano, Province of Taranto.
TRAINING SYSTEM: espalier.
SOIL: clayey.
PLANTING DENSITY: 4500 plants per hectare.
HARVEST PERIOD: third week of August.
VINIFICATION: Wine obtained from organically grown grapes in application of EEC Reg. 2092/91 Controlled by ICEA. Mechanized harvest carried out in the early hours of dawn. Vinification in rosé, short maceration at a temperature of 10°C, primary fermentation takes place in steel at a controlled temperature. Steel second fermentation.
AGEING: in steel tanks Colour: bright pink.
BOUQUET: fresh and delicate, reminiscent of red fruits.
TASTE: the taste has a slightly acidulous note with a fresh, pleasant and harmonious taste ALCOHOL CONTENT: 11,5% vol. – Serve at a temperature of 8°C
FOOD PAIRING: fish-based first courses, white meats, vegetables and cured meats.
