GRAPE VARIETY: Negroamaro IGP Salento Biologico, a native vine of the provinces of Taranto, Brindisi and Lecce that came centuries ago from Greece.
PRODUCTION AREA: Masseria Mita, municipality of Crispiano, province of Taranto.
TRAINING SYSTEM: espalier SOIL: clayey
PLANTING DENSITY: 4500 plants per hectare
HARVEST PERIOD: first week of September.
VINIFICATION: Wine obtained from organically grown grapes in application of EEC Reg. 2092/91 Controlled by ICEA. Mechanized harvest in the early hours of dawn. Short crushing with cold maceration. Fermentation at a controlled temperature of 22-24°C for 8-10 days, during which daily pumping over takes place. Spontaneous malolactic fermentation immediately after alcoholic fermentation.
AGEING: in steel tanks
COLOUR: deep red with violet reflections.
BOUQUET: intense with fresh fruit, reminiscent of raspberry and strawberry.
TASTE: full-bodied, balanced with a pleasantly persistent finish.
ALCOHOL CONTENT: 13.5% vol. – Serve at a temperature of 18°C (recommended by the glass)
FOOD PAIRING: Recommended on first courses, roast meat, game and cured meats
