THE FARM
Masseria Mita, owned by Vincenzo and Maria Imperatrice, belonged to the Monastery of Purity of Martina Franca in the early seventeenth century and is located at the foot of the Murgia Tarantina, in a landscape of great beauty, thanks to the presence and scent of the Mediterranean scrub.
The company structure is a closed courtyard, i.e. surrounded by dry stone walls, which also includes an eighteenth-century "Jazzo" and a threshing floor, incorporated into the body of the building, a defense sentry box and a chapel dedicated to the Immaculate Conception, the latter used for private celebrations and not for public worship, given its small size.
VINEYARDS
As per the millenary traditions of our land, the precious vineyards could not be missing. In our project, we thought of harmonizing a varied assortment of grape varieties. In fact, in the 10 ha. of vineyards, our native vines of Primitivo, Negroamaro, Aleatico, Chardonnay, the latest born in 2023 a vineyard of Susumaniello were considered. The vineyards are trained in espalier. The high number of plants per hectare allows us to limit the quantity of bunches per vine and obtain maximum nourishment of the root system, facilitate air circulation and maximum insolation of the foliage, optimization of mechanical processing and the right vegetative balance between the plants.
We are 370 meters above sea level. Thanks to the presence of a hill that intersects with the "Antico Tratturello Martinese" you benefit from an important temperature range that favors the expression of fine and elegant aromas.
OLIVE GROVE
At the foot of the hill overlooking the Masseria, we walk along the historic "ancient Martinese sheep track", a transhumance route that invites us to visit the centuries-old olive groves of the Ogliarola variety. Among these is a monumental and presumably the most historic one that has been nicely named "the myth of Mita". These majestic trees, natural sculptures, are surrounded in the individual plots by dry stone walls.
We have also added a modern olive grove of the Leccino variety to the centuries-old olive grove. This is how we obtain our extra virgin olive oil, with high quality standards that we are proud to offer to consumers, thanks to the harvesting of olives directly from the tree through picking and mechanized harvesting. The olives are pressed within 24 hours of harvesting, with a cold pressing system. The resulting EVO oil is then stored in the company's steel tanks and protected by nitrogen, to preserve all the organoleptic qualities and is then packaged for retail consumption.
