GRAPE VARIETIES: 70% Primitivo Salento Igp Organic, 30% Negroamaro Salento Igp Organic
PRODUCTION AREA: Masseria Mita, municipality of Crispiano, province of Taranto.
TRAINING SYSTEM: espalier
SOILS: clayey and ferrous
PLANTING DENSITY: 4500 plants per hectare HARVEST PERIOD: first week of September.
VINIFICATION: Wine obtained from organically grown grapes in application of EEC Reg. 2092/91 Controlled by ICEA. Mechanized harvest in the early hours of dawn. Short crushing with cold maceration. Fermentation at a controlled temperature of 25°C for 8 - 10 days. Maceration on the skins lasts 15 days for the extraction of tannins and anthocyanins.
AGING: the wines mature separately for 12 months in French oak barrels, then they are blended and aging continues in the bottle.
COLOUR: purplish red
BOUQUET: on the nose it has typical floral and spicy notes
TASTE: full-bodied, balanced with a pleasantly persistent finish
ALCOHOL CONTENT: 14% vol. – Serve at a temperature of 18°C (it is recommended to pour it in a glass)
FOOD PAIRING: suggested on first courses, roast meat, game, cured meats and aged cheeses
